EASY-PEASY TUNA MELT

Ingredients:

12-16 ounces of GOOD tuna packed in olive oil, drained

½ cup diced celery hearts

½ cup of minced scallions – both white and light green parts

3 tablespoons of minced fresh dill

3 tablespoons of freshly squeezed lemon juice

Kosher salt and fresh ground pepper to taste

¾ cup good mayonnaise – I use Duke’s but a Hellmann’s or something else will also work just fine

1 teaspoon of anchovy paste – – this is Optional of course if you don’t like it, but it adds a nice flavor

4 large slices of white bread or any good farmhouse bread – – make the slices thicker than normal

4-6 ounces of Swiss cheese, grated

Directions:

In a medium size bowl, fluff the tuna finely with a fork.  Add the celery, scallions, and dill, and continue mixing and fluffing it up with a fork until everything is combined nicely.  Add the lemon juice, 1 ½ teaspoon of salt (approx.), and ¾ teaspoon of pepper.  In a separate bowl combine the mayonnaise and anchovy paste – if using – and then mix into the tuna.

Preheat your broiler.  Toast the bread in the toaster and place the toasted slices on a sheet pan.  Spread a quarter of the tuna mixture on each slice thickly and evenly making sure to cover the entire slice.  Sprinkle the cheese evenly over each of the 4 slices, covering the tuna completely.  Broil for 1-3 minutes (depending on your oven), until the cheese just starts to melt and turns slightly brown.  DO NOT LEAVE THIS UNATTENDED!   Serve with your choice of dipping vegetables and maybe even stick a little parsley or something on top of each slice to finish it off for presentation.   ENJOY!
