Lamb Chops (grilled indoors)

Lamb Chops Indoors


2 large garlic cloves

1 tablespoon of fresh rosemary

1 teaspoon of fresh thyme

Pinch of cayenne pepper

Coarse sea salt

2 tablespoons of EVOO

6 Lamb chops, about ¾ inch thick


In your food processor add garlic, rosemary, thyme, cayenne, and salt.  Pulse until thoroughly combined.  Pour in the olive oil and pulse into a paste.  Rub the paste on both sides of the lamb chops and allow them to marinate in the refrigerator for at least 1 hour.  Remove from the refrigerator and allow the chops to come to room temperature which will take about 20-30 minutes.

Heat a grill pan over high heat until almost smoking (I used our amazing smokeless grill for this in the video but you could easily use a cast iron skillet), then add the chops and sear for about 2-3 minutes. Flip the chops over and cook for another 3 minutes for medium-rare, and 4 minutes for medium. If you want them any more than that – you’re on your own.

I served these with some melting potatoes and a salad on the side.
