Gussie’s Rhubarb Pie

Gussie’s Rhubarb Pie Recipe (Gussie is my maternal grandmother.)

INGREDIENTS:

TOPPING:

½ Cup of Flour

½ Cup of Sugar

¼ Cup of Butter (cut in)

PIE SHELL:  (Use your favorite or check this blog for the one I like to use from White Lily Flour Co)

FILLING:

5 Cups of Rhubarb washed and cut into small pieces

1 Cup of Sugar

¼ teaspoon salt

2 tablespoons of tapioca pearls

Directions:

Mix the sugar, salt, and Tapioca pearls together and pour over the Rhubarb.  Let stand for 15 minutes.   Pour or spoon the covered Rhubarb into the pie shell.  Spread topping over the top.

Bake at 400 degrees F for 40-50 minutes.  Serve warm or cold with ice cream or nothing at all.  It’s good anytime and in any form you choose.  It’s wonderful with a fresh cup of coffee.  And whatever you do – don’t mix strawberries into this recipe and ruin it.
