EASY COCONUT GREEN CURRY MEATBALLS
1 cup of green curry paste
4 cups coconut milk
1 ½ cups finely chopped fresh cilantro
Approx. 28-34 ounces of cooked meatballs
Add the green curry paste to a slow cooker on low or medium-low, and once it’s heated slowly whisk in the coconut milk
After the milk is blended with the green curry paste, add 1 cup of cilantro and stir to incorporate.
Add the meatballs and cook until the sauce thickens slightly, and the meatballs are heated through – about 1-2 hours
When ready to serve, garnish with the remaining ½ cup of cilantro.
I will serve this over rice, or pasta, or rice noodles. Also, just before serving you can add in sautéed onions, or steamed broccoli, or mushrooms, or anything else you might enjoy.
