
The Papa’s Kitchen
The original recipe from the restaurant calls for 4 loaves, but I have cut the recipe in half here so that you can make just 2 loaves.
Ingredients:
¼ cup Guinness
2 pounds or 7 ¼ cups of Whole meal flour (whole wheat)
1/3 cup All-purpose Flour
1 ½ teaspoon of salt
1 1/2 teaspoon of baking soda
2 cups Oats, rolled
2 ounces or ¼ cup of Molasses
1 quart of buttermilk
Directions:
- Preheat oven to 350 degrees F
- Place all dry ingredients in a large bowl
- Combine all wet ingredients in a separate bowl
- Add the wet to the dry in 3 batches as you mix and fold by hand lightly; the mixture should be quite sticky
- Portion into a greased or buttered muffin pan OR 2 loaf pans
- Sprinkle on top with some oats and press into dough lightly
- Bake in the oven until golden brown and it makes a “hollow” sound when tapped on the bottom – about 20 to 30 minutes
- Remove from the pans and cool slightly
Guinness Reduction
Ingredients:
1 pint of Guinness Beer
1 pint (2 cups) of Sugar
Directions:
- Combine the Guinness, and sugar in a large saucepan
- Bring to a boil and reduce to simmer until reduced by half (approx. 1 hour)
- Remove from heat and allow to cool to room temperature
- Refrigerate to store
To serve, place 2 oz of Olive oil in a saucer / small plate and drizzle 2 oz of Guinness Reduction at room temperature, serve as a dip for the bread
